Amma's Gaajar Halva

You have to go to India in the winter to have this dish. When you get those dark reddish carrots called gaajars. Although the orange ones are called that too, aren't they? My mother used to make this a lot. I loved it and learned how to make it. Once in Hyderabad I had it with cream - you couldn't buy cream in those days - you couldn't buy yogurt either! - I think Prematha had gotten hold of it from some shop in Sultan Bazaar. And it was heavenly.

Gaajars - or use ordinary carrots - 1 kg, peeled and grated

Sugar

Ghee

Slivers of almond to garnish
