Just spinach

One bag of frozen whole leaf spinach (for speed, otherwise fresh is obviously nicer)
1 tsp Mustard seeds
1 tsp Cumin seeds
1 tsp urad dal (white lentils)
I fresh chilli, chopped fine
I medium sized onion, sliced as if strands of a plait (not in semi circles)
2 good sized cloves of garlic (spinach loves garlic, can take a fair bit)
Very small pinch of turmeric
2 tbsps of sunflower oil
Salt (got to have a small hand with salt in greens, as they say in Hyderabad!)
Put a saucepan on the fire, when dry, add the oil, when hot but not smoky, add the cumin and mustard seeds. When they are popping and crackling add the urad dal. Sizzle for a half minute, then add the chilli, stir it around for a tad, then the onion and garlic. Stir them round till the oil coats the whole nicely, but don’t let the onions brown or even go translucent. Within a minute, put in the turmeric and salt, stir, then chuck in the spinach, stir it all up. Cover and wait maybe ten minutes or so till the whole is together, but the onions and garlic still showing white against the green. If you are using frozen spinach you will need to wait a bit longer, breaking up the frozen blobs every so often.
