Mallika's grated carrot salad, Indian style

I had this first at Mallika's mother's house in Sainikpuri. And it was a revelation! Utterly fresh, simple and so tasty.

Grated or julienned carrots (maybe 4 or 5?)
Lemon juice - of 1 large lemon
small handful of torn coriander leaves
1 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1 pinch of asafoetida
1 green chilli slit
Small handful of karyapak (curry leaves)
1 tablespoon of sunflower oil
Salt

Mix the carrot, lemon juice, salt and coriander leaves in a large bowl. Put a small pan on the fire for the talimpu (tempering or tadka). When the oil is hot, add the mustard seeds, let them pop a bit, then the curry leaves and then the green chilli. Stir around for half a minute, then add the asafoetida and turn off the fire immediately. Stir and mix into the carrot mix.
