Roasted chicken niblets (or bits of lamb or pork fat)

Fried chicken nibblets or chicken wings (cheap to buy large-ish quantities of).

Marinate these earlier in the day with ginger garlic paste, some chilli powder, garam masala powder and salt (and touch of turmeric). basically the wetness of the ginger garlic paste makes the powders cling to the meat - no need for oil.

Put them in a hot oven to roast for about twenty minutes or fry them (but this is more smoky to do while guests are around and demands more active attention).

I once marinated and fried bits of lamb fat like this, for nibbling on. I felt very guilty about the fat – but it was tasty. I suppose there’s nothing to stop us doing the same with pork scratchings too!
