Stellitsa's Greek Chocolate Cake

This has to be the all time favourite in our house. Stellitsa told me how to make it when we were in Crete on holiday probably in about 1995, staying in that rented house in Bali, we upstairs with Kevan's mother, us and the kids, and Giannis, Stellitsa and Christopheros staying downstairs. Colwyn was there too on that holiday. Stellitsa was cooking of course, and one day there was this wonderful cake. I wrote the recipe down on a scrap of paper, used that paper to make it many many times after that, all the time the kids were growing up. Gave the recipe to loads of people who loved it. And then, disaster, lost the paper. I did get the recipe again over the phone a couple of years ago, but it wasn't quite the same. And then, the other day I found it!! Tucked away in the good housekeeping book of all places.
250 gms Butter or margarine
7 tbspns Cocoa powder
1 1/4 mugs of water
2 mugs sugar
Flour 1 1/2 mugs
5 Eggs
4 or 5 tspns baking powder
Put the water, margarine, cocoa powder and sugar into a pan until the marge is melted. Put aside one mug (or a bit more for luxury!) of this beautiful mixture.

Now whisk the eggs in a large bowl, add the mixture (minus the put aside amount), put in the flour and baking powder and mix well.

Pour this into a wide baking tin (with marge rubbed on surfaces as usual) and bake in a hot oven 200 degrees C for about 30 minutes. Take out of the oven, cut int squares and while still hot, pour the put aside mixture over the whole surface so the chocolateyness soaks into every nook and cranny. It is delicious.
